                                Insalata Caprice 

                                            * One Carton Wet Mozzarella Cheese

                                    * Four Ripe & Firm Tomatoes

                                * One Bunch Fresh Basil

                           * Kalamata Olives

                    * Olive Oil

                                    * Balsamic Vinegar

                                * Chili Pepper 

Cut cheese and tomatoes in 1/4 in. thick slices.

Arrange the tomatoes on a platter.  Place cheese atop the tomato slices.

Arrange some of the fresh basil leaves about the platter.  

Chop remainder of basil in ribbons and sprinkle atop the cheese.

Dust with chili pepper for zest and drizzle with oil and vinegar.
